I'd go 225/40 myself, 215/40 if you have rubbing issues going super low.
Perhaps, I always pulled my decks and went aftermarket which had Ipod/Aux inputs.

What are you using to connect it? Did you get some specialty adapter meant to go from Ipod to a VW Deck? The CD changer or PhatBox Hoooked up in the trunk, but I'm not sure how the other end...
Nope. 5.0L V8 I pretty much baby the truck and drive as slow and smooth as possible to save on fuel.

Start off with the above advice and see what options fit your car properly. Keep in mind that if you go with too big of a rim on stock suspension it may look funny.

Ya sounds a little pricey. I would have expected more like the 7-800 range from a private shop. Probably mostly labour, I'm not sure what the access is like on those ones or how easy it is.
